Fruit Pizza

I've been craving fruit like crazy for most of my second trimester. As in, I want to eat it all day, every day. (I suppose that's better than the McDonald's egg and cheese bagel sandwiches and Spaghetti O's - yuck! - cravings from my first trimester.)

So I went on a Pinterest spree searching for all things fruity and I came across  this scrumptious looking fruit pizza on Pinch of Yum, and I knew I had to make it right this second. I mean really, a giant sugar cookie topped with cream cheese icing and fruit? Yes. Now.


I did make a few ingredient swaps to make it a little more whole food friendly - instead of regular flour, I used wheat flour and instead of sugar, I used maple syrup. I also used less cream cheese and more butter in my frosting. I considered using mascarpone instead of cream cheese, but didn't have enough in my fridge (I've also been craving Ezekiel bread with mascarpone and blueberries - again with the fruit).

This is so delicious, even with the whole wheat flour swap, which I was a little apprehensive about trying, but it turned out just fine! And I can imagine all different types of fruit as toppings. Endless fruity possibilities.

I wanted to take pictures of this with the DSLR to truly capture it in all its glory, but I couldn't wait to dive right into it immediately after I snapped a few pics with my iPhone. The poor thing is looking rather mutilated right now, since I chowed down on it. Oh well. Next time. And I'll use mascarpone next time, too. Because there  will be a next time.


My modified recipe:
Cookie:
1 cup maple syrup
2 3/4 cups wheat flour
1/2 teaspoon baking powder
1/2 teaspoon salt
14 tablesppons unsalted butter
2 teaspoons vanilla extract
2 eggs

Frosting:
8 ounces cream cheese (I used whipped cream cheese)
10 tablespoons unsalted butter
1 teaspoon vanilla
1 3/4 cup powdered sugar
Fruit
